I need some recipes for a healthy, vegetarian lunch..?
I’m kind of running out of ideas for lunches; I usually just have something like a veggie burger or a peanut butter sandwich with carrots and yogurt. Does anyone have some good recipes for a healthy, vegetarian lunch that wouldn’t take a really long time to make?

Ingredients
* 2 tablespoons olive oil
* 2 1/4 cups chopped onion
* 3 cloves garlic, minced
* 1 habanero pepper, chopped
* 1 1/2 tablespoons grated fresh ginger root
* 1 teaspoon salt
* 3/4 teaspoon ground allspice
* 3/4 teaspoon ground nutmeg
* 2 1/4 cups cooked black beans, rinsed and drained
* 2 1/4 cups cooked long-grain white rice
* 2 1/2 cups dry bread crumbs
* 6 hamburger buns, split
Directions
1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add onions and garlic; cook and stir for a few minutes. Mix in the habanero pepper and continue cooking until tender. Remove from the heat and transfer to a bowl. Pour in the beans, rice and bread crumbs. Season with ginger, salt, allspice and nutmeg. Mix thoroughly using your hands. Form into 6 patties.
May 23rd, 2010 at 2:27 pm2. Heat the remaining oil in a large skillet over medium-high heat (you can use the same one). Fry the patties until golden on each side, about 10 minutes total. Serve on buns with your favorite toppings.

bean thread vegetarian stir fry:
kame bean threats
chopped garlic cloves
frozen birdseye asparagus stir fry
low sodium soy sauce
sesame oil
sautee garlic with a bit of olive oil. add frozen veg. and cook for a few minutes. add bean threads and cook for a minute, add soy sauce and sesame oil, salt, and pepper.
its really good, i eat it all the time.

I’m vegan so i don’t know of any good yogurty stuff but i LOVE tofu!! I get the seasoned kind and just sautee it in olive oil its REALLY good
i also like sushi, its not hard to make if you have the materials. I also really like hummus and pita bread and carrots and hummus and also baby spinach with balsalmic vinegar and walnuts and cranberries (if you like cheese feta is good on the salad to)

Grilled cheese sandwich (you could also add onions, tomatoes, or apples) and some type of soup.
Veggie pita with anything you like in it… Lettuce, tomatoes, alfalfa sprouts, cheese, onion, green pepper, cucumber, carrots, olives, pickles, tzatziki sauce, ranch dressing, greek dressing, etc…
Simple sandwich like toasted tomato or cucumber and cheese, with some kind of fruit.
Veggie pasta.. Ex: Broccolli, carrots, alfredo sauce… Mushrooms, onions, tomato sauce..
Chili and corn bread.
Toasted sub: Butter, cheese, mushrooms, peppers, onions, olives toasted until melted. add lettuce after it comes out of the oven.
Bruschetta and ceaser salad.
Pizza!

I’m using one of our laptops while my PC is getting repaired. Otherwise, I would have a plethora of veg recipe links for you. However, if you search "vegetarian lunches" "vegetairan sites" "vegetarian recipes", etc. you will find a plethora of good sites. The few that are coming to mind are The Post Punk Kitchen, VeggieBoards, Compassion Over Killing, Mercy for Animals, Veg Web… Blech. I just remembered that my husband put my book marks on a jump stick, but I’ve yet to see the stick. Oy.

Makes a giant batch, lasts about a week. Is very filling, delicious and healthy.
I also like hummus and cucumber sandwiches.
Another idea is a simple salad, just buy a big bin of pre cut green, toss in some dried fruit, nuts and dress it with a simple vinigrette.

Ingredients
* 1 cup chopped walnuts
* 1 (18.25 ounce) package yellow cake mix
* 1 (3.4 ounce) package instant vanilla pudding mix
* 4 eggs
* 1/2 cup water
* 1/2 cup vegetable oil
* 1/2 cup dark rum
* 1/2 cup butter
* 1/4 cup water
* 1 cup white sugar
* 1/2 cup dark rum
Directions
1. Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch Bundt pan. Sprinkle chopped nuts evenly over the bottom of the pan.
May 23rd, 2010 at 2:28 pm2. In a large bowl, combine cake mix and pudding mix. Mix in the eggs, 1/2 cup water, oil and 1/2 cup rum. Blend well. Pour batter over chopped nuts in the pan.
3. Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the cake comes out clean. Let sit for 10 minutes in the pan, then turn out onto serving plate. Brush glaze over top and sides. Allow cake to absorb glaze and repeat until all glaze is used.
4. To make the glaze: in a saucepan, combine butter, 1/4 cup water and 1 cup sugar. Bring to a boil over medium heat and continue to boil for 5 minutes, stirring constantly. Remove from heat and stir in 1/2 cup rum.
