What are some good vegetarian cookbooks with healthy, gourmet recipes?
I’m looking for a cookbook that has some really good gourmet vegetarian recipes for appetizers, main dishes and sides. I really love Southwest/Mexican food like burritos and empanadas, but I also like Italian and Asian.
Can anyone recommend some really good cookbooks with great-tasting, healthy, gourmet, vegetarian recipes?
Thanks.

Since you like southwest/Mexican I thought I would post the link to this website. They have a lot of great vegetarian chili recipes

I also like some of their wonderful side dishes like the southwest vegetable salad and the grilled vegetable recipe with the 9 spice rub

Enjoy these wonderful and great tasting recipes
